Happy New Year Coffeecake

I wanted to have something special for the new year with our coffee, so I made a GF coffeecake.  I used the GF Bisquick that I had on hand and had to modify the recipe since I didn't have any brown sugar.  Chuck said it was good, it must have been, he ate 2 pieces!  He is not GF, but he has become that since I primarily make things that are GF instead of making two different things.

I think I would change the recipe by adding another layer of the topping to the middle of the cake, which I think will help with some of the dryness in the cake.  This I will make again.

Jimmy John's Unwich

I have become a fan of Jimmy John's Subs.  Not because of the bread they serve their sandwiches on, which I am sure is very tasty, but because of the "unwich" that they make.  I personally love the "unwich".  One thing that I have missed is eating a good sandwich, but now I can have a great unwich  and enjoy the a sandwich.  Craving a sandwich...try out Jimmy John's Unwich! (My favorite is #12, the Beach.)

Peanut Butter - Chocolate Chip Bars with Chocolate Frosting

Here is the recipe for those scrumptious bars.....

1 box Betty Crocker® Gluten Free chocolate chip cookie mix
1/3 cup butter, softened
1/3 cup gluten-free peanut butter
1 teaspoon gluten-free vanilla
1 egg
1 cup Betty Crocker® Rich & Creamy chocolate frosting
1.   Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of (8- or 9-inch) square pan.
2.   In medium bowl, stir together cookie mix, butter, peanut butter, vanilla and egg with spoon until soft dough forms (dough will be crumbly). Pat dough into pan. Bake 18 to 22 minutes or until edges are dry and golden brown. Run knife around inside edge of pan. Cool on wire rack about 1 hour.
3.   Spread frosting over bars. Cut into squares, 4 rows by 4 rows.
